Rabdi is a sweet, condensed-milk-based dish,dairy product originating from the Indian subcontinent, more specifically Bengal region. Milk is made by boiling it on low heat until it thickens and turns white or pale yellow in color. Jaggery, spices and nuts are added to it for flavor. It is served chilled as a dessert. Rabdi is the main ingredient in many desserts like Rasbali, Chena Kheri and Khira Sagara.
There is a similar dish called Basundi.

Ingredients:-

1) full fat milk – 1 ltr
2) Sugar – 5 to 6 tsp(optional)
3) Cardamom powder – 1/2 tsp
4) Pistachio & almonds – 10 to 15( Chopped)

Instructions:-

1)What we will do the first to make Rabdi , we will put the Wok on the gas to heat, but if Wok is made by Iron then the result will be very good. But if you don’t have Iron Wok then Non Stick Wok will also Work.

2)Now we will slowly pour 1 Ltr Full Fat Milk in the Wok. Now we will increase the flame of the gas and keep stirring the milk continuously with the help of a spoon till the milk starts boiling so that the milk does not stick to the Wok’s bottom and does not burn.

3) We have to boil the milk till the quantity of milk becomes half. When the quantity of milk becomes half, then we will add 5 to 6 spoon sugar in it and add 1/2 tsp cardamom powder. will mix and keep stirring the milk.

4) We have to boil the milk till the quantity of milk remains only 30%. when the amount of milk in wok is 30% it means that our Rabdi is ready, now turn off the gas.

5) Now add chopped dry fruits Pistachios and Almonds to the Rabdi and mix.

6) Now we will take out Rabdi in Bowl and garnish it with the dryfruits.

7) So, Rabdi is ready to eat and for the best result, you can refrigerate it and eat it after cooling. Eating it cold increases its taste even more and together you can eat it with Jalebi , Gulab Jamun, or Malpua, Icecream, Ghevar etc.
