Vegetable Biryani is a rice-based dish made with spices, Basmati rice , and mixed with Chicken, Mutton etc. But, the plate being served is vegetables. Biryani rice dish originating among the Muslims of South Asia.
It is made with Indian spices, vegetables, rice, and usually some type of meat (chicken, beef, goat, lamb, prawn, or fish), or in some cases without any meat ,and sometimes, in addition, eggs and potatoes.
Biryani is one of the most popular dishes in South Asia, as well as among the diaspora from the region. Similar dishes are also prepared in other parts of the world such as in Iraq, Myanmar, Thailand, and Malaysia.
Biryani is the single most-ordered dish on Indian online food ordering and delivery services, and has been labelled as the most popular dish overall in India.
So, let’s Make Veg Biryani .
How To Make Biryani
Ingredients:-

1. Basmati Rice- 250 Gms
2.Peeled and chopped Potato – 1.5 cups
3.Green Peas – 1 Cup
4.Green Beans chopped- 1/2 cup
5. Cauliflower – 1.5 Cup
6.Carrot chopped – 1/2 cup
7.Salt – to teste –
8. Bay Leaf -4 to 5 leaf
9.Cinnamon- 3 stick
10.Clove- 4
11.Black Cardamom Pods- 1
12. Green Cardamom Pods- 5 to 6
13.Black Papercorns – 4
14.Cumin- 1/2 tsp
15. Green Chillies – 7 sliced
16.Onion – 3 ( 1 big size- sliced for fried onion and 2 medium size- diced for Sabji
17.Tomato- 2 Diced
18.Curd – 2 tsp
19.Garam masala powder – 1/2 tsp
20.Turmeric powder – 1/2 tsp
21.Coriander Powder – 1 tsp
22.Red Chilli powder – 1 tsp
23.Biryani Masala 1/2 tsp
24.Meant leaves – 5 to 6
25.Ginger Garlic Peste – 1 tsp
26. Coriander Leaves – chopped -1 cup
27.Orange food colour or Saffron water( 8 to 10 Saffron strands wet into the water for 15 minutes )
28.Ghee or Butter 2 tsp
Instructions:-

1) first of all, we will take a bowl and we will rinse our rice in it very well and keep aside for 30 minutes.
2) Till then we will take a big Onion and cut it into slices and put oil in a pan and deep fry it well. Saute till the Onions are light brown. Our fried Onion is ready, we will keep them on the side as well.
3) Now we will dice the vegetables( 1 Big Potato, 2 Big Tomatos, 2 Medium Onion Diced, Cauliflower 1.5 cup)and will chop the Green Beans- 1/2 cup, Carrot- 1/2 cup, Coriander Leaves-1 cup and Green Peas -1 Cup, Green Chillies – 7 sliced.
4) Now we will take a deep vessel and we will put it on the gas and turn on the gas flame. Now we will put 2 spoons of oil in it and as soon as the oil becomes slightly hot, we will put some Cumin in it.
We will add all the dry spices one by one that we have like Bay Leaf -4 to 5 leaf,Cinnamon- 3 stick,10. Clove- 4,Black Cardamom Pods- 1,Green Cardamom Pods- 5 to 6,Black papercorns – 4, Saute them and add carefully water in it.
we have to add water at least 4 times more than according to our rice.
Now we will add Salt according to the taste of water.Now we will keep it on high flame to boil.
5) As long as the water is boiling, we will keep another Deep Pan on the other Gas to heat. now add 4 tbls oil in it As soon as the oil is become hot add diced onion and sauté,
When onion becomes soft add Ginger Garlic paste – 1 tsp and sauté, now add 4 sliced Green Chilies and 2 big Diced Tomatoes & sauté them well.
Now add Spices in it like Red Chili powder – 1 tsp, Coriander Powder – 1 tsp, Turmeric powder – 1/2 tsp, Garam masala powder – 1/2 tsp, Mix it well.
When Tomato’s becomes soft we will add the diced Vegetables in it like Potato, Cauliflower 1.5 cup, Green Beans chopped- 1/2 cup,3.Green Peas – 1 Cup, Carrot chopped – 1/2 cup now add Curd – 2 tsp, add salt as per taste, add some biryani masala for the flavor and mix it well. Now cover it and let it cook for 15 minutes.
6) When water kept for rice has started boiling when we will add our rice inside it. Now we will let the cook for 10 to 15 minutes or until it is 80% cooked.
7) Rice is being cooked on one gas and our Vegetables are being cooked on other gas and timing of both of them should be such that both of them should be cooked 80% at the same time.
8) After the rice is 80% cooked we will strain the rice and remove excess water.keep a side.
9) After the Vegetables are 80% cooked we will add some chopped Coriander and mix well. keep a side.
10) Now we will put a Pot on the low gas to heat it, now we will put our vegetables in it and spread a little.
now we will put cooked half quantity rice on the top of it and spread a little, put a 1 tsp Food colour or saffron water on top,
Put 2 Green Chillies sliced on top, Sprinkle some Biryani Masala and Fried Onion and Chopped Coriander leaves,put a 1 tsp Ghee( Butter), Now we will put all our remaining Vegetables on top of it.
Similarly we will do the second layer also in the same process,After that we will cover it and steam the rice on the low heat at least 5 to 10 minutes.After 5 to 10 minutes turn off the gas.
11) Now our Yummy Veg Biryani Ready to Eat. So serve the Veg Biryani in a plate with Dahi Koshimbir and Papad also. You can also eat Veg Biryani with Pickle. But according to me Dahi Koshimbir or Raita tastes better with Veg Biryani .
