Rabdi or Malai Ghevar or Ghevar (Devanagari: Ghevar ) is a Rajasthani Delicacy which is a Disc-Shaped sweet made of Ghee, Flour and Sugar Syrup.

It is traditionally associated with the month of Shravan and the festivals of Teej and Raksha Bandhan.It is a part of Rajasthani tradition and gifts are given to the newly married daughter on Sinjara, a day before Gangaur and Teej. Apart from Rajasthan, it is also famous in the surrounding states of Haryana, Delhi, Gujarat, Uttar Pradesh and Madhya Pradesh.

Ghevar is also exported to foreign countries.Ghevar is a Disc-Shaped Sweet Cake made from Flour, Ghee (Clarified Butter), and soaked in Sugar Syrup.Flour, Ghee, Milk and Water are mixed to make the batter. The batter is then poured into ghee in a disc shape and fried to a golden honeycomb-like texture.

Common toppings include saffron, spices, and nuts. Ghevar comes in many varieties, including plain, mawa and malai ghevar. LMB of Jaipur introduced variations like chhena Ghevar .

Ghevar can be soaked in sugar syrup or often topped with rabri. A special variation for weight watchers and diabetics is a sugar free version available nowadays.

Ghevar | How To Make Ghevar

 

RABDI GHEVER

Ingredients:-

1)ALL PURPOSE FLOUR – 100 GMS
2)GHEE – 2 TSP
3)GRAM FLOUR – 1/2 TSP
4)LEMON JUICE – 1 TSP
5)PISTACHIO & ALMONDS- 10 to 15
6)CARDAMOM POWDER – 1/2 TSP
7) SUGAR – 1 CUP

Instructions:-

*Sugar Syrup

1) Put 1 cup of water in sugar in a utensil and place it on the gas flame to make sugar syrup, after boiling add cardamom powder in it and cook for 9 to 10 minutes, take a drop of sugar syrup with a spoon and drop it on a plate, when it cools down, stick it between finger and thumb, it should stick between finger and thumb, 2 strings should be formed in sugar syrup, sugar syrup is ready.

2) Cool the syrup so much that you can touch it with your hand and take a plate.

* Ghevar

1) First , we will take a Jar of mixer and we will put 2 spoons of Ghee in it and also also add 7 to 8 Ice cubes in it and Grind it in the mixer so that the ghee gets creamy texture.

2) There is another traditional way to get creamy texture to ghee and that is, we have to take bowl and put 2 spoons of ghee and 6 to 7 pieces of ice in it and beat it continuously till it gets creamy texture. There is some effort in this and it will also take time, so we are taking help of a Mixer. Ghee will get creamy texture in just 5 minutes in the Mixer.

3) Now, we will add the All Purpose Flour & Gram Flour direct in the mixer.Now we will take chilled water.

Now pour half a glass of water in that mixer jar and we will turn on the mixer, now it has come in liquid form, we have to use only cold water to ger Ghevar Jalidar(Net) texture and make very thin batter and after making batter we will keep it in the Refrigerator to cool down further.

3) Now to make Ghevar , we will take any plastic or soft drink small bottle. Wash it inside well and make a small hole in its lid and fill the bottle with the batter prepared for Ghevar.

4) To make Ghevar We will take Deep Small Pot and pour one fourth of pot the oil in it. we will keep the oil to heat on high flame and as soon as the oil becomes hot taking a bottle filled with batter,

5) we will pour a little batter in the middle of the deep vessel and pour the batter little by little by making a space in the middle, we have to pour the batter little by little until the bottle remains half, then make a space in the middle and we have to continue the same process until the bottle is halfway, then stop pouring the batter and fry the Ghevar by pushing it slightly from inside with the help of a spoon.

6) So that it gets roasted well from the top side as well. Now we will put a wire or a small spoon in the hole made in the middle of the Ghevar and take it out with a light hand and keep it on the lattice stand so that its excess oil comes out. We have to make all the Ghevar like this.

5) Now our Tasty Ghevar is ready. And now we will pour our prepared sugar syrup on it and on it we will also spread our rabri and decorate it with silver paper and on it we will put some of our chopped dry fruits so that our Ghevar will look attractive.

TIP:

When you want to eat Ghevar , at the same time you should eat it by adding Sugar syrup or Rabdi,otherwise it will become soft and you will not enjoy eating it.
